- 28 oz of ripe banana, about 6 medium bananas
- ¼ cup crushed pecans
- ¼ cup chocolate sauce, fro drizzling
Wet batter
- 1 cup water
- 1 cup all-purpose flour
- ½ cup cornstarch
- 2 tablespoons glutinous rice flour
- 1 tablespoon baking powder
- A pinch of salt
Breadcrumbs coating
- 1 cup of panko breadcrumbs
- ½ cup of orange breadcrumbs, You may use one type if preferred
Method
Prepare the Wet Batter:
- In a mixing bowl, combine water, all-purpose flour, cornstarch, glutinous rice flour, baking powder, and salt.1 cup water, 1 cup all-purpose flour, ½ cup cornstarch, 2 tablespoons glutinous rice flour, 1 tablespoon baking powder, A pinch of salt
- Whisk until smooth and lump-free. Set aside.
Mix the breadcrumb coating
- In another container, mix the white and orange breadcrumbs evenly. Set aside.1 cup of panko breadcrumbs, ½ cup of orange breadcrumbs
Prepare the Bananas
- Trim the ends off each banana and slice each one in half (you’ll get 12 pieces total).28 oz of ripe banana
- Dip each banana piece first into the wet batter, then coat evenly in the breadcrumb mixture.
- Set aside on a tray or plate.
Deep Fry the Fritters
- Heat oil in a deep frying pot over medium heat.
- Test readiness by dropping a few breadcrumbs into the oil (See Note 4)
- Fry the coated bananas in batches (don’t overcrowd!) for 1–2 minutes until golden and crispy.
- Transfer to a wire rack to drain excess oil.
Garnish and serve:
- Drizzle generously with chocolate sauce.¼ cup chocolate sauce
- Sprinkle crushed pecans over the top.¼ cup crushed pecans
- Optional: Add a touch of grated Parmesan or mozzarella for a salty-sweet contrast.
Notes
- Work quickly: Overheating will warm the inside.
- Smaller fritters work best for this style, as they heat more evenly and retain a cold core.
- You can even re-freeze freshly made fritters just for this effect.
- To test readiness by dropping a few breadcrumbs into the oil:
- Gentle bubbles: ready.
- Aggressive bubbling/burning: too hot
- No bubbling: not hot enough - Cold-center trick (Fried Ice Cream Style): Air fry frozen fritters for 2–3 mins at 375°F (190°C). Don’t thaw!
