Ingredients
- 3 large boneless, skinless chicken breast (about 2 lbs)
- 1 tablespoon chili powder
- 1 tablespoon lime juice
- ½ tablespoon paprika powder
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup sliced onion
Method
Marinate the chicken:

- Coat the chicken breasts evenly and let marinate for at least 20 minutes (or overnight for deeper flavor).
Cook the chicken fajitas:
- In a skillet, heat cooking oil over medium heat.
- Add marinated chicken and sear for 3–4 minutes per side, until golden brown and cooked through. Remove from the skillet, let rest.
- In the same skillet, toss in the sliced bell peppers and onion. Stir-fry for 4-5 minutes until slightly browned and softened but still crisp.1 red bell pepper, 1 yellow bell pepper, 1 green bell pepper, 1 cup sliced onion
Garnish and serve:
- Slice the cooked chicken into strips.
- Layer over sautéed vegetables.
- Garnish: Fresh lime wedges & chopped cilantro.
- Serve with tortilla or lettuce wraps.

Storage:
To Meal Prep
- Refrigerate: Store cooked chicken and veggies in separate airtight containers for up to 3 days.
- Freeze cooked chicken up to 1 month. Thaw overnight before reheating.
- Reheat: Warm in a skillet over medium heat for 5–7 minutes to keep texture.
