Chinese‑Style Onion Omelette

Ingredients
  

  • 4 large eggs
  • 8 oz onion, thinly sliced
  • ½ tbsp light soy sauce
  • Salt and black pepper, to taste
  • Cooking oil, for frying

Method
 

  1. Crack eggs into a bowl or measuring cup. Season with soy sauce, salt, and black pepper. Beat until smooth and fully combined. Set aside.

  2. Heat oil in a skillet over medium heat.

  3. Add sliced onions and stir-fry until softened and lightly caramelized.

  4. Spread onions evenly across the skillet.
  5. Pour in the beaten egg mixture, swirling the pan so it coats the onions evenly.
  6. Cook for 2–3 minutes until the bottom turns golden brown. Flip the omelette and cook for another 2–3 minutes until fully set.
  7. Garnish with shredded seaweed or scallions. Serve warm with jasmine rice or your favorite dipping sauce.

Notes

Storage:
Store leftover slices in an airtight container in the fridge up to 24 hours.
Reheat:
In a pan over medium heat, or air fryer at 300°F (150°C) for 3–5 min to keep edges crisp.
Don’t Freeze:
Eggs + onions get weird texture after thawing—best fresh.
