Ingredients
Marination of chicken wings
- 2 lbs Chicken wings
- ½ teaspoon ground white pepper
- ½ teaspoon salt
- 0.4 oz thinly sliced ginger
- 0.7 oz spring onion, cut into 2-inch pieces
Coke chicken wings
- 1 teaspoon cooking oil
- ½ cinnamon stick
- 1 star anise
- 1 mini 8-oz bottle Coca Cola, about 230 ml
- 1 Tablespoon light soy sauce
- ½ Tablespoon oyster sauce
- 1 teaspoon dark soy sauce
- Half a lemon, cut into wedges (about 2.5 oz)
Method
Marination the chicken wings:
- Score each chicken wing.2 lbs Chicken wings
- In a bowl, combine wings with ginger, spring onion, salt, and white pepper.½ teaspoon salt, 0.4 oz thinly sliced ginger, 0.7 oz spring onion, ½ teaspoon ground white pepper
- Massage well. Cover and marinate for 15 minutes.
Cook the wings
- Heat oil in a skillet over medium heat.1 teaspoon cooking oil
- Sear wings for 3–4 minutes, turning occasionally until lightly golden.
- Add cinnamon stick and star anise. Pour in half the Coke, bring to a boil.½ cinnamon stick, 1 star anise, 1 mini 8-oz bottle Coca Cola
- Add remaining Coke, light soy sauce, dark soy sauce, and oyster sauce. Stir well.1 Tablespoon light soy sauce, ½ Tablespoon oyster sauce, 1 teaspoon dark soy sauce
- Lower the heat, cover with a lid, and simmer for 5 minutes until the sauce thickens.
- Uncover and simmer to the desired sauce consistency.
- Add lemon wedges. Cook for 30 seconds—no more, to prevent bitterness.Half a lemon
Garnish and serve:
- Garnish with roasted sesame seeds. Serve hot with rice or noodles.
Notes
- Refrigerate the leftovers in an airtight container for up to 3 days or freeze the leftovers for up to 1 month.
- Add a splash of water or coke before reheating the leftovers in the microwave or reheat in a skillet over medium heat.
