Spicy Korean Pork Stir Fry

This bold and savory Korean pork stir-fry recipe stars thinly sliced pork belly, marinated in a rich blend of gochujang, soy sauce, tomato paste, and chili powder, then stir-fried to sizzling perfection with sweet red onions and garlic. The pork turns caramelized and slightly crispy at the edges, locking in a deep, spicy umami flavor with every bite.

Ingredients
  

  • 11.85 oz pork belly, 335g
  • 2 tablespoons light soy sauce
  • 1 tablespoon Gochujang sauce
  • 1 tablespoon tomato paste
  • 1 tablespoon chili powder
  • 2 teaspoons sesame oil
  • 2 tablespoons minced garlic
  • 1 medium red onion, sliced

Method
 

  1. In a large bowl, add light soy sauce, gochujang, tomato paste, chili powder, and sesame oil to the pork. Mix until evenly coated.

  2. Add in minced garlic and sliced red onion, and mix again to combine.

  3. Let marinate for at least 20 minutes.
  4. Heat a bit of cooking oil in a large skillet or wok over medium heat.
  5. Add the marinated pork mixture and stir-fry for 6–8 minutes, or until the pork is cooked through, edges are caramelized, and onions are tender.
  6. Serve with steamed jasmine rice, a sunny-side-up egg, and a side of vegetables like cucumber, seasoned leek, sesame seeds and shredded gim.

Notes

  1. Slice the pork thinly for fast cooking and better flavor absorption.
  2. Use medium heat — high heat can burn gochujang easily.
  3. Add a splash of sesame oil before serving for that glossy finish.
Storage:
  • Fridge: Up to 3 days in airtight container.
  • Freezer: Up to 1 month. Thaw overnight, then reheat gently in a pan.
 
Make-Ahead :
  • Marinate the pork in advance (up to 24 hours). The longer it sits, the deeper the flavor.
