Ingredients
Marination of shrimp:
- 5 oz shrimp, 10 pcs medium size
- ¼ tsp salt
- ¼ tsp black pepper
Scrambled egg:
- 3 large eggs
- 2 tbsp of milk
- Salt and pepper to taste
Avocado spread:
- 2 avocado
- ½ tsp of dried chilli flakes
- Salt and pepper to taste
- ½ tsp of lemon juice
Base:
- 2 bagels, plain, sesame, or everything bagel recommended
Method
Marinate the Shrimp
- Place shrimp in a bowl. Season with salt and black pepper.5 oz shrimp, ¼ tsp salt, ¼ tsp black pepper
- Cover and refrigerate for 15 minutes to enhance flavor.
Cook the Shrimp & Eggs
- Heat olive oil in a skillet over medium heat.
- Sauté marinated shrimp for 3 minutes or until opaque. Remove and set aside.
- In a bowl, beat eggs with milk, salt, and pepper.3 large eggs, 2 tbsp of milk, Salt and pepper to taste
- Pour into the same non-stick skillet over medium heat. Let sit for 5 seconds, then gently fold from edges toward the center for fluffy, soft-scrambled eggs.
- Remove from heat while slightly creamy on top.
Make the Avocado spread
- Scoop avocado flesh into a bowl and mash until creamy or slightly chunky.2 avocado
- Stir in lemon juice, chili flakes (optional), salt, and pepper. Mix well.½ tsp of dried chilli flakes, ½ tsp of lemon juice, Salt and pepper to taste
Assemble the Bagel Sandwich
- Slice bagels in half and toast if desired.2 bagels
- Spread avocado mixture onto the bottom half of each bagel.
- Layer with scrambled eggs and cooked shrimp.
- Cap with the top half of the bagel.
Notes
- Scrambled Eggs: Always cook on medium-low heat for creamy, fluffy results.
- Bagel Texture: Toasting enhances flavor and texture—don't skip it!
- Avocado Hack: Prefer slices over mash? Slice the avocado and season on top for an elegant twist.
- Zesty Shrimp: Add a light squeeze of lemon on the shrimp before serving.
- No Spice? Omit the chili flakes for a milder version.
- Storage: Wrap leftovers tightly and store in fridge up to 1 day (but it’s best fresh).
