Cucumber Lemonade
Okay, it’s hot out. The kind of hot where you open the fridge and just stand there for a second, quietly hoping something cold in there will fix your whole life.
Regular lemonade would do the job, but I’ve made it a hundred times and I wanted something a little more interesting. So I went with cucumber lemonade instead.
It’s honestly so good. Cool and crisp and barely sweet, with that clean cucumber freshness that hits like a deep breath on a hot day. One sip and your whole body sort of relaxes. And if you like making your own drinks at home, my orange tea with cheese foam is another one worth bookmarking.

Taste and Texture
It’s smooth and cool and barely sweet, with a crisp little citrus snap and a clean cucumber finish. It doesn’t punch you in the face with sour, it just quietly refreshes and gets on with it.
It’s silky too, because we strain the pulp out, so you’re not chewing your drink. We’re not animals here.
And I’ll say it: I’d serve this at a party over soda any day!
Throw a picnic blanket down: ice-cold cucumber lemonade plus a basket of hot, crispy Taiwanese popcorn chicken. That’s a whole summer afternoon, sorted.

What You Need To Make Cucumber Lemonade
Here’s the lineup. All easy, all stuff you’ve probably already got.

- Cucumbers: the cool, fresh base of the whole thing. Peel them for a smoother, cleaner drink. Skin-on works too, just greener and a touch more bitter.
- Lemon juice: the zippy kick that wakes everything up.
Fresh-squeezed beats bottled. - Simple syrup: sweetens with no grainy sugar bits.
Sub: honey or agave, just stir it in properly. - Water: turns it into an actual jug, not a shot.
- Ice cubes: non-negotiable. Cold is the entire personality.
- Mint: for that fresh, garden-y smell. Optional.

How to Make Cucumber Lemonade
Prep the cucumber
Peel, halve, scoop out the seeds. The seeds make it watery and sad, so out they go. Chop into chunks.

Blend and strain
Cucumber into the blender with a splash of the water. Blend till totally smooth. It turns into the prettiest pale green slushie. Pour it through a strainer to lose the pulp. Press it to squeeze out every last drop.

Build the jug
Fill a jug with ice. Cucumber juice in, then the lemon juice and simple syrup. Top with the rest of the water.

Stir and garnish
Stir well. Drop in mint and lemon slices. Serve cold, right now, ideally somewhere shady. Done!

Substitutions/Variations
| Substitution / Variation | Details |
|---|---|
| No simple syrup? | Use honey or agave instead. Stir until fully dissolved. |
| Want it tangier or sweeter? | Add more lemon juice for extra tang or more simple syrup for added sweetness. |
| Want some fizz? | Replace the plain water with soda water or lemon-lime soda. |
| Feeling fancy? | Add a few jalapeño slices or a sprig of rosemary to the pitcher for extra flavor. |
| Want it rustic and extra green? | Leave the cucumber skin on. Just note that it may add a slight bitterness. |

FAQ and Tips

Storage
- Best enjoyed fresh. Like, pour-it-and-drink-it fresh.
- Holding it? Keep it in the fridge or up to 24 hours. It separates as it sits, so stir well before serving.
- Add the lemon and mint right before serving for the brightest flavour and prettiest look.
To Make Ahead
- Blend and strain the cucumber juice early, then build the jug when people show up.
