Some dinners are a whole production. This minced meat and egg rice bowl is not one of them, thank goodness. It’s the kind of thing you throw together on a tired weeknight and somehow end up a little obsessed with.
Juicy minced pork in a glossy soy sauce, soft eggs cooked right on top, all spooned over hot rice. Twenty minutes, one pan, done.

The pork goes savory and a little sweet in that soy-garlic-ginger sauce, the kind that turns all glossy and clings to everything. Then you break a soft yolk into it and it goes unreasonably rich. Like, illegally good.
The celery and bell pepper sneak in a little crunch so it’s not all soft and one-note. And over steaming jasmine rice? Honestly this is comfort food doing the absolute most with the least.
Quick note for my fellow egg people: if you want soft and silky, my double steamed eggs are the move. And when I want egg over rice but have basically zero time, I make stir fried tomato and egg instead. Both saucy, both rice-bowl approved.

Here’s what you’re working with. Nothing fancy, all stuff you can grab at any shop, and the sauce does most of the heavy lifting.

- Minced pork – The juicy main event.
Minced beef works too if that’s what’s in the fridge. - Light soy sauce – The salty, savory base of the whole sauce.
- Dark soy sauce – Just a splash, mostly for that deep glossy color.
- Oyster sauce – Brings the rich, slightly sweet umami.
- Garlic + ginger – The fragrant duo. This is where the good smell starts.
- Cornstarch – Thickens the sauce so it clings instead of running everywhere.
- Celery + red bell pepper – Crunch and color.

How to Make Minced Meat and Egg Rice Bowl
Mix your sauce first.
Stir the water, both soy sauces, oyster sauce, salt, pepper, and cornstarch together in a small bowl. Set it aside.


Wake up the aromatics
Heat a little oil over medium heat and toss in the garlic and ginger. Sauté until fragrant.

Brown the meat
Add the minced pork, break it up, and cook until it turns pale. Then in go the celery and bell pepper for a quick stir, just until they soften a touch.


Sauce it
Pour in your sauce and let it bubble until it thickens and goes glossy. This is the deeply satisfying part.

Egg time
Drop the heat to low, make four little wells in the pork, and crack an egg into each. Lid on, 3 to 4 minutes, until the whites set and the yolks are still soft. Resist lifting the lid every five seconds. (I know. It’s hard.)
