Regular lemonade would do the job, but I’ve made it a hundred times and I wanted something a little more interesting. So I went with cucumber lemonade instead.

How to Make Cucumber Lemonade

Prep the cucumber

Peel, halve, scoop out the seeds. The seeds make it watery and sad, so out they go. Chop into chunks.

Blend and strain

Cucumber into the blender with a splash of the water. Blend till totally smooth. It turns into the prettiest pale green slushie. Pour it through a strainer to lose the pulp. Press it to squeeze out every last drop.

Build the jug

Fill a jug with ice. Cucumber juice in, then the lemon juice and simple syrup. Top with the rest of the water.

Stir and garnish

Stir well. Drop in mint and lemon slices. Serve cold, right now, ideally somewhere shady. Done!

Pretty good, yeah. It’s mostly water, so it’s genuinely hydrating, and cucumbers and lemons bring a little vitamin C, vitamin K, and potassium along for the ride. It’s not a magic detox drink though (ignore anyone who says that), and the simple syrup does add sugar. Go lighter on the syrup if you want it more virtuous.

Ingredients
  

  • 3 medium size cucumber
  • 3 cups water, 1 cup to blend with cucumber
  • Ice cubes
  • ½ cup lemon juice
  • ½ cup simple syrup
  • Mint to garnish

Method
 

  1. Peel the cucumbers, cut them in half, and scoop out the seeds.
